Nutty Butter Delight Bars with Coco Health Marine Collagen
Ingredients
-
1 cup unsalted mixed nuts, roughly chopped
-
1 cup unsweetened shredded coconut
-
½ tsp ground cinnamon
-
1½ tsp vanilla extract
-
½ cup unsweetened nut butter
-
3 tbsp sugar (or 2tbsp honey)
-
⅛ tsp salt
-
3 tbsp cacao nibs (optional)
-
1 tbsp ground flaxseed
Method
-
Add the nuts, coconut flakes, and cinnamon to a large dry frying pan. Set aside without turning on the heat.
-
In a small saucepan, combine the ghee, nut butter, vanilla extract, and sea salt. Heat over low heat, stirring with a spatula until the ghee has melted and the mixture is smooth.
-
Stir in the collagen powder, cacao nibs (if using), and sugar until fully combined. Remove from the heat.
-
Place the frying pan over medium heat and toast the nuts and coconut for 3–5 minutes, stirring frequently, until lightly golden and fragrant.
-
Transfer the toasted nut mixture to a food processor and pulse a few times until the nuts are roughly chopped.
-
Add the chopped nut mixture to the saucepan and stir until everything is evenly coated.
-
Line a small food storage container or loaf pan (approximately 7 inches/18 cm wide or smaller) with parchment paper. Pour the mixture into the prepared container, spread it into an even layer, and smooth the surface with a spatula.
-
Cover and refrigerate until completely firm.
-
Cut into bars or squares and store in the refrigerator for the best texture and flavor.
